Say hello to Erin.
The creative lady behind the blog Making Memories With Your Kids where you’ll find loads of kid friendly recipes made alongside her two gorgeous children.
I love that Erin takes every advantage possible to spend time passing on her love of cooking, baking and creating with her children, as can be seen from her blog and numerous recipes, which are filled with lots of love.
Autumn is now well established here in Australia and it’s time for all of my favourite comfort foods. So on seeing this recipe, my decision for April's Secret Recipe Club recipe was made. Yep, doesn’t take me long!
As always, I did tweak Erin's recipe (see original here) for my own health issues by swapping the pasta and plain flour to gluten-free buckwheat pasta and flour.
However, if you're planning to do the same, please don't make the rookie mistake I made, and over bake. Gluten-free pasta, when overcooked, is not a pleasure to eat and continues to absorb any and all liquid that surrounds it, turning it to mush. This gluten-free version should only have been baked for 10-15 minutes. Tops!
The Secret Recipe Club: Is a way to find and share new blogs. Each month we are secretly assigned to another member of the club where we select a recipe to make, photograph and share on-line.
