After the last few weeks I've had, I have no desire to cook, let alone any inspiration to want to get back into the kitchen, except to make a cup of tea. However, a quick look on The Stone Soup website has sparked a little interest ...... I'm so pleased that I cleaned out one of my cupboards one day which lead to discovering a lost cookbook, which then lead to re-discovering The Stone Soup blog.
"10 Ingredient Shopping List" - that sounds about my pace right at this moment.
Jules has listed down 10 simple ingredients along with 5 simple recipes for those of us with limited time or like me, limited inspiration. they included:
- cherry tomatoes
- red capsicums
- baby spinach
- canned tomatoes
- smoked paprika
- chicken mince
- canned white beans (cannellini)
And the 5 simple dinner recipes using the above 10 ingredients:
1. Quick pork ragu
2. White bean and avocado salad
3. Sausages with summer veg
4. Spanish chicken with white bean mash
5. Chicken burgers with avocado and red salad
Guess which one I started with......
Sausages with Summer Veg
Yum, yum, yum! Within minutes I was curled up on the couch under my blanket with a big bowl of this delicious dish. The juice from the tomatoes, sausages and the capsicum as they cooked down created enough of a luscious sauce that no liquid was necessary. Just keep in mind, that the key to this dish is a good quality sausage - It is the hero after all.
Thanks Jules! x
