Who does not like pork belly? Seriously! I completely understand you saying no if you're a vegetarian, but if you do eat meat then surely you must LOVE it. I don't eat it often, but when I do....oh my....I swoon.
So this little piggy skipped all the way home from the butcher after collecting the all important ingredient for this simple and yummy little mid-week meal.
White Bean and Crispy Pork Salad

I'm a sucker for pork crackling, so this dish was a delight for me to cook. Even though the pork takes a little time to cook in the oven for a mid-week meal, it does then give you plenty of time to prepare the salad, pour a glass of wine and perhaps put your pj's on....or maybe that's just me.
