Mid Week Meal Time

My dinner last night. 

Pure comfort in the form of a super simple, quick and tasty dish. 

And cooked all in the one pan too!  Doesn't get any better than that for a Tuesday night.

 

Spiced Beef with Hummus

My version of the recipe.......

 

1 onion, peeled and diced | 2 carrots, diced | 2 celery sticks, diced | 500g minced organic beef | 2 tsp baharat (or 1/2 tsp each of ground coriander, cumin, paprika and cinnamon) | 400g can organic chickpeas, drained and rinsed | Coconut oil (or your choice of oil) | Hummus and fresh baby spinach to serve |

 

  1. Heat a generous amount of coconut oil in a frying pan over low heat and cook the onion, carrot and celery for about 5 minutes until starting to soften, but not brown. 
  2. Add the beef and increase the heat to high.  Cook, stirring often until the beef is well browned all over. 
  3. Add the spice and stir for another minute or two then add the chickpeas.  Taste and season.
  4. Serve on a bed of hummus with the fresh spinach leaves or your favourite salad.

 

Cooking this dish brought back loads of memories for me as it's very similar to a dish my mum would make all the time when I was growing up.  Hence, why to me, it's pure comfort food. 

Being able to use a cheaper cut of meat is just the cherry on top!
