Pure comfort in the form of a super simple, quick and tasty dish.
And cooked all in the one pan too! Doesn't get any better than that for a Tuesday night.
Spiced Beef with Hummus

My version of the recipe.......
1 onion, peeled and diced | 2 carrots, diced | 2 celery sticks, diced | 500g minced organic beef | 2 tsp baharat (or 1/2 tsp each of ground coriander, cumin, paprika and cinnamon) | 400g can organic chickpeas, drained and rinsed | Coconut oil (or your choice of oil) | Hummus and fresh baby spinach to serve |
- Heat a generous amount of coconut oil in a frying pan over low heat and cook the onion, carrot and celery for about 5 minutes until starting to soften, but not brown.
- Add the beef and increase the heat to high. Cook, stirring often until the beef is well browned all over.
- Add the spice and stir for another minute or two then add the chickpeas. Taste and season.
- Serve on a bed of hummus with the fresh spinach leaves or your favourite salad.
Cooking this dish brought back loads of memories for me as it's very similar to a dish my mum would make all the time when I was growing up. Hence, why to me, it's pure comfort food.
Being able to use a cheaper cut of meat is just the cherry on top!
