I am currently immersed in an on-line creative course at the moment which I'm absolutely loving, however on top of a busy work day, it's leaving me no time whatsoever to prepare dinner, let alone eat it.
As you well know, that will NEVER happen!
So I'm leaning on my super quick, super yummy "fall back" recipes that can be knocked up in minutes, and I thought I might share some of my favourites with you.
Lentil, Avocado and Feta Salad
I love, love, love this recipe as depending what is in your fridge, you can adapt it easily. If I'm really hungry, I tend to add a tin of tuna and wham bam thank you ma'am......I'm a very happy and full girl!
