The Stone Soup Website was were I discovered the use of hummus as an actual part of a meal, rather than smeared on crackers or celery. Now, I use it like I would mashed potato, just like in this little quick mid-week meal....

Unfortunately I had no coriander on me, however I did have some yummy fresh baby spinach leaves instead, which made for a more complete meal, I think.
Not a fan of tofu - perhaps chicken or even haloumi might float your boat instead?
